Ageing; 'On-Lees', as with the traditional champagne method

Structure; Balanced Brut (Dry) sparkling wine

Food pairing ideas; On it's own, with soft Cornish cheeses or with seafood and shellfish, including fish and chips!

Description;

The nose is fresh but also a little creamy, blending biscuit, green apple, (white) currant and gooseberry. On the tongue freshness continues as a main theme, in an elegant and light way that is not without a certain depth. There is a light touch of yeast, adding just the right amount of creamy, and fresh citrus notes that come out nicely in a long, tingly finish with a mineral end.

Producer Profile:

Camel Valley Vineyards are situated on the sunny slopes above the River Camel - halfway between the Atlantic and Channel coasts. 8000 vines are now grown on the south-facing side of the Camel Valley. Traditional vineyard practices combined with a New World approach to wine making ensure high quality red, white and sparkling wines are produced.
The area's mild climate, concentration of clear sunlight, and pure air give Camel Valley wines a distinctive fresh Cornish style. The wines have won numerous national and international awards and have been used to represent Cornwall at many prestigious events at home and abroad.

Camel Valley won the 2009 International Wine Challenge Trophy (and Gold Medal), a Decanter World Wine Awards Gold Medal, the 2009 English Wine Producer’s Trophy, The Waitrose Trophy, the South West Sparkling Wine Trophy and were runner up to Bollinger in the World Sparkling Wine Championships in Verona.
