Food pairing ideas; A perfect match for Fish and Fine Seafood
This lovely wine is produced from the oldest vines from Domaine Pascal Bouchard. Thanks to low yields, careful viticulture and long aging, this genuine Chablis shows a great complexity: flinty and lively mineral expression, with fruit flavours of great concentration and ripeness.
Pascal Bouchard is an independent family owned company that draws on the experience of 5 generations of dedicated vinegrowers.
The Estate covers 33 hectares within the 4 appellations of Chablis: Chablis Grand Cru, Chablis Premier Cru, Chablis and Petit Chablis. The main part of the vineyard was planted by Pascal Bouchard during the early 80’s. The oldest vines, planted by André Tremblay during the 50’s and 60’s.
The philosophy of the winery and it's staff is an understanding and respect of the soil’s natural balance, grass cover, rigorous pruning and training programmes, natural treatments against pests and diseases, yield management, and a quest for optimum ripeness. All lead to the highest quality possible in the wines produced.
