So we have slipped a little sake into our list. Why not? Sake has a long and distinguished role in the evolution of Japanese culture, can be incredibly complex and delivers some outstanding food pairings. We have been looked after by Akashi-Tai since the beginning, they are a boutique sake producer based in Akashi City, a fishing town in Western Japan. The brewery has been established for over 140 years and we feel produces some outstanding sake.
